My boyfriend and I were relaxing on a Saturday after our tea when we were both craving something else, so I suggested I whip up a batch of brownies. Big Mistake! These are delicious with a capital D!
I made two batches in a weekend and they were both gone by Monday, oops! so be warned, these are so moreish!
175g soft dark brown sugar
35g plain flour
25g cocoa powder
chocolate chips (about 1/3rd packet)
150g margarine or dairy free spread (I used Pure soya spread)
1 tsp baking powder
100g dark chocolate
4 tbsp Dulce de Leche Caramel (I used my leftover Carnation caramel)
Nuts chopped (I used almonds and walnuts)
Pre heat the oven to Gas Mark 4 / 180C and line a square baking tin about 20cm across.
Melt 50g chocolate and all the spread in a bowl in the microwave. It will take about a minute or so on high.
Meanwhile put the sugar in a big mixing bowl and add the eggs. Beat till all combined and relatively smooth.
Sift the flour, baking powder and cocoa powder and mix in, then add the butter and chocolate mixture and mix until all combined.
Break the remaining chocolate into chunks then add them to the mixture. Chop some nuts roughly and add those and the chocolate chips to the mixture. Add as many as you want depending on how naughty you feel. Mix well then pour into the tin.
Heat the caramel in the microwave for about 20 seconds and mix it so it is quite runny. Then pour into the mixture and swirl around but not too much that it disturbs the chocolate or mixes into the mixture, it is more for the top only.
Bake in the oven for 30 minutes. They will go quite dark because of the dark brown sugar in them so don’t worry if you think they look burnt, although if they’re starting to look as though they are burning take them out earlier!!
