Chicken & pasta in tomato sauce
Serves 1 (easily doubled)

Ingredients
- Frylight or 1 tsp vegetable oil
- Skinless chicken breast
- Half an onion
- 1 clove of garlic
- half a tin of chopped tomatoes
- 1 tbsp tomato paste
- 2 oz pasta shapes (either penne or fusilli)
- salt and pepper
Method
1. Put some water in a pan and let it come to the boil and add a pinch of salt to the water. In another pan spray the frylight or add the oil to the pan.
2. Dice the onion finely and dice the chicken. Add the onion to the pan and sweat gently until it is soft and opaque. Crush the garlic using a garlic crusher or alternatively chop finely and add to the pan. Let it cook for another minute. Meanwhile add the pasta to the other pan.
3. Add the chicken to the onions and garlic and fry gently until the chicken is cooked through. Add the tomatoes, tomato paste and season well. If the sauce becomes a little dry add a few drops of water from the kettle.
4. Once your pasta is cooked, drain it. Serve the pasta on the plate and add the chicken and tomato sauce over the top.
