If you follow me on social media, then you might know that recently I’ve become obsessed with cauliflower rice. I’d read a few things about it but I decided to give it a go a few weeks ago and I really like it. It takes less time than rice and has less calories as well! Yes I will admit if you really don’t like cauliflower then this might not be for you as you do get a very slight cauliflower taste.
Serves: 3-4 ProPoints: 0 per serving Prep Time: 10 minutes Cook Time: 2 minutes
- 1 cauliflower
1. Either grate the cauliflower or put it in a food processor (I highly recommend the latter if you have one, it can be time consuming grating a lot of cauliflower).
2. Once done put in a bowl and cling it, leaving a little gap for steam. Cook for about 2-3 minutes depending on the strength of your microwave.
I like to eat mine in place of traditional foods you have with rice, like curry or chilli.
