Recipe: Clean Oat Pancakes
Following on from last weeks experiment of banana pancakes I decided this week to try oat pancakes. These are probably my favourite of the two, they taste so much like a regular pancake. They are gluten free (if you use GF oats) and full of protein and so simple to make!
I added blueberries and raspberries and a drizzle of honey to my pancakes and they were seriously delicious!
Recipe: Clean Oat Pancakes
Ingredients:
- 35g oats
- 1/2tsp baking powder
- 1 medium egg
- 50ml boiling water
Instructions:
- Weigh out the oats and then slowly add the boiled water to make a porridge like consistency. I used about 50ml but you may need more or less.
- Add the baking powder the egg and whisk to a pancake batter.
- Heat your pan and then add a spoonful of the mixture. Wait until it bubbles up and the edges are dry then flip.
