Recipe: Healthy Steak & Ale Pie

Steak and Ale Pie

When the nights start getting colder and it’s dark in the evenings, I love eating things that are warm and filling and to me Steak and Ale pie is one of my favourite comfort foods. Now when I say ‘healthy’ it’s only because there’s only so much fat and calories you can cut down on before it starts resembling mush. So this is fairly healthy, and equates to roughly 8 points a serving if you follow WeightWatchers.

What you'll need

Sweat the onions
Seal the beef
Add plain flour to thicken the sauce
add the stock
Add the ale
If the sauce isn't thick enough, add cornflour
Washing Pastry
Pie is ready to go in the oven

This is delicious served with some creamy mashed potatoes and green veg
  • Fry Light
  • 1 Onion, diced
  • 1 or 2 cloves of Garlic, crushed
  • 500g Lean Stewing Beef
  • 1 bottle or can of beer or ale
  • 1 pack of Mushrooms
  • 1 pack of Puff Pastry
  • 1 Beef Stock Cube
  • Plain Flour
  • Cornflour
  • Salt & Pepper to taste
  1. Dice the onion.
  2. Spray a couple of sprays of Fry Light spray into the pan and sweat the onions until they're nice and soft
  3. Add the garlic and cook for another minute or so.
  4. Trim the beef of any fat if there is any and dice into small pieces. Add this to the pan and cook until the meat is sealed
  5. Add a tablespoon of plain flour, this will help thicken the sauce.
  6. Make up half a pint of stock using the stock cube and add to the pan.
  7. Add about ⅓ of the beer or ale and let this simmer for 2 hours
  8. After 2 hours add the mushrooms and simmer for another half an hour.
  9. If the sauce isn't thick enough when you come to check it then you can thicken it by adding some cornflour in a cup or bowl and adding some water to make a paste, then adding this to the pan.
  10. Pre-heat the oven to Gas Mark 5/ 190°C
  11. Season to taste, then pour the beef and ale into a pie dish then roll out your pastry (if it isn't ready rolled) and put this on top of the pie.
  12. Finally wash the pastry with a little skimmed milk and then place in the oven for 25-30 mins or when the pastry is golden and flaky.
